Merlot - Colli Bolognesi doc
Grapes> They come from a vineyard facing west, growing on a clay soil, but well drained with sand and pebbles, suitable for Merlot, which in the “Colli Bolognesi” is almost an autochthonous grape. Grapes are harvested at the end of September, later than the traditional harvesting time, when they come up to full ripening. Grapes are harvested by hand and selected at first glance and then put in small plastic crates. Deep red ruby colour is extracted after batonnage and delĂ©stage. After malo-lactic fermentation, long maturing in its lees, mainly in stainless steel tanks, then some ageing in bottle.
Distinguishing characteristics> Small soft red fruits invest your senses. Vigorous and nimble at the same time, stylish and elegant, it shows strong but sweet tannins, reaching an ideal balance between roundness and freshness.
