Grapes
Barbera comes from a vineyard facing north-east, dominating the plain towards north, with a spectacular view towards Bologna to the east and the whole pia nura.
Bred as an espalier, guyot, with a philosophy that carefully avoids cuts
thick and favors the correct lymphatic flow. Careful green pruning, with
selection of sprouts. Harvest of the first half of September,
Manual, in box, with selection of grapes.
Vinification
Short cold maceration on the skins. Soft pressing.
Fermentation with naturally occurring yeasts
